Easy, Delicious, and Healthy TANGERINE SALAD
4 – 6 servings
3 Tangerines
2 Bib Lettuces
1 red bell pepper, diced
2 tablespoons Wine Vinegar
1 teaspoon honey or Maple Syrup
½ tablespoon Dijon Mustard
¼ cup cilantro leaves or lemon basil
3 tablespoons Olive Oil
¼ cup pitted Black Olives, sliced
Feta Cheese
1. Peel and slice the tangerines; dice the bell pepper.
2. Mix vinegar, maple syrup, mustard, cilantro or lemon basil, and olive oil in a bowl. Divide for two salads!
3. In the first salad, arrange one butter bib lettuce, add the solids from the vinaigrette, and then the liquid when ready to serve.
4. In the second salad, arrange one butter bib lettuce, add the solids from the vinaigrette, and then add the Feta cheese and the olives. Add the dressing when ready to serve.
