Whoah what? A breakfast recipe? Yup. I know… shockingly, on Sunday I generally have some sort of egg-based breakfast. Usually we go out, but we are going out for dinner tonight (celebrating 12 years together) and one of the ways I keep all balanced is to try to eat out only once a day when I can. (Vacation aside of course). This means on days we eat out for dinner, I make breakfast.
Today’s I am dubbing “breakfast casserole” and seriously, we could eat it any time, any day. It was delicious and I am already looking forward to leftovers!

Monday: Greek quinoa bowl
Tuesday: Going out to dinner (Most likely I will be ordering their salmon plate – grilled salmon, steamed veggies and sweet potato fries. It’s one of my fave things there. I also love their bbq chicken pizza… but it’s not a treat day.)
Wednesday: Tuna casserole + Garlic toast
Thursday: Veggie pizza + Wings
Friday: Ground pork + bell peppers over zucchini noodles
