This one is a healthy version without the mayo.
300g boiled baby potatoes (skin off)
1/2 cup of steamed asparagus
1/2 cup of chopped pickled cornichons
1/4 cup of chopped red onion
1 tbsp chopped dill
For dressing:
2 tbsp Greek natural yoghurt
1 tbsp Dijon mustard
2 tbsp white wine vinegar
drizzle of extra virgin olive
Prepare potatoes by peeling skin off and cutting in half.
Put to boil until they are just soft.
Cut asparagus into 2 cm pieces and put to steam.
Chop pickled cucumbers, red onion and dill.
Add all ingredients to bowl and prepare dressing.
Combine dressing with all ingredients and season with salt and pepper.
