here’s my easy oil-free plant-based lunch from today I had sushi rice with steamed broccoli and onions and extra firm tofu that I sauteed in a frying pan on the stove top for 3 minutes with a splash of soy sauce I make rice bowls often because I’m a creature of habit and I know it’s a filling meal that I enjoy eating it’s also a nutrient-rich healthy high fiber meal especially when you add a variety of veggies and I tend to mix it up dayto day so one day I’ll have kale another day I’ll have broccoli asparagus bell peppers and on and on if you’re too busy to make this from scratch every day you can double or triple the quantities and have lunches for the next few days ready remember keeping it simple is key to sticking with healthy eating long enough to see and feel results
