🙌Healthy comfort food 💯. So simple, I promise 😊.
RECIPE
1 onion, chopped
2 tbsp Garlic, chopped
1/4 cup sofrito. (I like the green one with CULANTRO! And I’ll add more to taste of needed)
1 tsp cumin
1 tsp oregano
1 tbsp onion powder
1 tsp thyme
salt and pepper to taste
VEGETABLES GALORE
2-28 Oz can diced tomatoes
2 cups frozen vegetables
3 -4 potatoes (cut smaller to cook faster)
1 bunch of kale, chopped
(use any vegetable you like – mushrooms, broccoli, peppers, etc.)
2- 3 cups of your favorite beans
(If using dry beans, soak first)
GARLIC BREAD
Your choice of bread
vegan butter
minced garlic
*BEYOND SAUSAGES go great with this soup too!
