The “recipes” I put together are never exact. I don’t measure anything and I’m always just winging it. I like things to be super simple, extra nourishing, and extremely tasty! This snack or dessert is both. And it’s healthy enough that I would let my toddler snack on it all day every day if he wanted. Those are my favorite types of snacks – the ones I don’t have to worry about him eating too much of!
“recipe”:
~1c frozen organic blueberries (i like wild blueberries – the smaller ones)
~1/2c raw cream
~generous dash of salt
OPTIONALS:
~generous dash of bee pollen (fun, colorful, sweet, and extra yummy)
~tbsp almond butter
~dash vanilla extract
Put everything in a mug and mash together with a spoon. It will turn a lovely purple and be very reminiscent of ice cream, except without ANY sugar. Who doesn’t love a delicious sugar-free dessert? If you’d like to make it dairy-free, replace the cream with a high quality coconut milk like this one If you do that I strongly recommend adding a tablespoon of almond butter and be sure to use enough salt – those two factors will go a long way in making up for the flavor lost without the dairy.
