This Broccoli and quinoa salad is a nutrient-packed dish ideal for weight loss. Combining fiber-rich broccoli and protein-filled quinoa, it offers a satisfying, low-calorie meal. It includes broccoli, fresh greens, nuts and tangy dressing.
INGREDIENTS
Salad Dressing:
– 1/2 Cup Cashew Nuts
– 1 Clove Of Garlic
– 1/2 Cup Coriander
– 1/2 Lemon Juice
– Salt To Taste
Salad:
– 1/2 Cup Quinoa
– 2 Cups Broccoli
– 1/2 Cup French Beans
– 1 Tsp Extra Virgin Olive Oil
– 2 Tsp Chopped Garlic
– 1 Cup Zucchini
– 1/2 Tsp Chilli Flakes
– 1/4 Tsp Black Pepper
– 1 Tbsp Salted Peanuts
– Salt To Taste
RECIPE
– Boil broccoli and French beans for 5 minutes and keep aside.
– Heat oil in a pan and sauté garlic till golden brown. Add zucchini and salt. Cook till done.
– Add broccoli, beans, chilli flakes, crushed black pepper and salt. Mix well. Transfer to a bowl and let it cool down.
– Wash quinoa 2-3 times with water.
– Boil quinoa in 1 cup water and some salt for 15-20 min.
– Transfer to a bowl and let it cool down.
– Add soaked cashew nuts, coriander, garlic, lemon juice, salt and water to a mixer jar and blend to make smooth paste.
– Mix sautéed vegetables, quinoa, salad dressing and salted roasted peanuts and serve the salad!
