A delicious and healthy Indian snack made from bottle gourd (lauki/dudhi).

🧂 Ingredients:
• 1 medium dudhi (bottle gourd), peeled and grated
• ½ cup chickpea flour (besan)
• ¼ cup breadcrumbs
• ½ cup chopped fresh cilantro
• ½ teaspoon garam masala
• ½ teaspoon cumin seeds
• Salt, to taste
• 2 tablespoons lemon juice
• ¼ teaspoon turmeric powder
• Oil, for shallow or deep frying

👩‍🍳 Instructions:

Step 1: Prepare the Dudhi
• Peel and grate the bottle gourd (dudhi).
• Place it in a muslin cloth or sieve and squeeze out excess water. This is important to prevent soggy cutlets.

Step 2: Mix the Ingredients
• In a large mixing bowl, combine:
• Squeezed dudhi
• Chickpea flour
• Breadcrumbs
• Chopped cilantro
• Garam masala
• Cumin seeds
• Turmeric powder
• Lemon juice
• Salt
• Mix well until everything comes together into a dough-like consistency. If the mixture feels too wet, add a bit more chickpea flour or breadcrumbs.

Step 3: Shape the Cutlets
• Grease your hands slightly with oil.
