Chocolate brownies
200 grams of unsalted butter
1 cup of brown sugar
Three eggs
½ cup of plain flour
¼ cup of cocoa powder
Melt the butter (and choc chips if you’re using them).
Stir in the sugar and let it cool a bit.
Add the eggs one at a time.
Then fold in the flour.
If you’re adding extras, like the nuts, now’s the time.
Pour it all into a lined tin and bake at 320F that’s 160C for 25 to 30 minutes.
Mini banana pancake
1 cup of plain flour – or oats
1 ripe banana
1 egg
1 cup of milk
1 teaspoon of baking soda
(Add some chia seeds if you’re ok stretching it to 6 ingredients!)

If not, mix your wet ingredients in one bowl, then add them to the dry in another
Whisk it all together.
Heat a non-stick pan or a big griddle over medium heat.
Dollop tablespoon-sized amounts on and cook for about a minute each side.
Mini muffins
2 large bananas
½ cup brown sugar
4 tbsp butter
¼ cup (homemade!) Greek yogurt
1 cup plain flour
Preheat oven to 350°F (175°C) and grease a large mini muffin tin.
In a bowl, mash the bananas.
Add brown sugar, melted butter, yogurt. Stir well.
Fold in the flour and mix until just combined.
Spoon into tin and bake for 12–14 mins.
Oat bars
2 cups rolled oats
1 cup peanut butter
½ cup honey
2 tbsp cocoa powder
Pinch of salt
Warm the honey and peanut butter together over a medium heat until it stirs smoothly.
Add the rolled oats, the cocoa powder, pinch of salt.
Mix it all together, press into a lined tray, and chill until set.
