Crispy on outside, super soft inside these Mexican inspired melt in mouth Rajma corn cutlets are high in protein, full of flavors and turns out so delicious. Served with a creamy, crunchy curd dip or say a raita making it a wholesome meal for a light Lunch/Dinner. 1 cup boiled Kidney beans/rajma
1/4 cup boiled Sweet corn
2 tbsp. each of green, yellow and red bell pepper
1 small onion chopped
2 tbsp. chopped carrot
1 green chili
5-6 garlic cloves
1/4 cup grated paneer
2 tbsp. roasted Gram flour/besan
Salt as per taste
1 tsp peri peri masala
3 tbsp. sesame seeds
1 tbsp. olive oil

1/4 cup thick curd
2 tbsp. grated cucumber
2 tbsp. chopped onion
2 tbsp. chopped tomato
1 tsp chopped jalapenos
1 tbsp. mixed seeds (Flax sees, Pumpkin and sunflower seeds)
Salt as per taste
1/4 tsp roasted cumin powder
