2 tbsp butter
5 tomatoes (halved)
1 tsp salt and black pepper
4 eggs
½ cup shredded cheese
Fresh cilantro (optional)
Instructions:
1️⃣ Melt butter in a pan and add halved tomatoes. Cover and cook until skins loosen.
2️⃣ Peel the skins, mash tomatoes into a puree, and season with salt & pepper.
3️⃣ Add shredded cheese and crack in the eggs. Cover and cook until done.
4️⃣ Garnish with fresh cilantro and enjoy!
