Chopped peppers
1 red onion
diced courgette
Low-calorie cooking spray
500g passata
1tsp balsamic vinegar
4 chopped garlic cloves
400g can of butter beans
cod fillets
chilli flakes
Put chopped peppers, red onion and diced courgette in a roasting pan. Spray with low calorie cooking spray and roast in a hot oven (220c/fan 200c/ gas 7) for 15 minutes or until the veg has softened and charred at the edges.
Stir in 500g passata mixed with 1 tsp balsmaic vinegar, 4 chopped garlic cloves and a can of butter beans. Top with 4 cod fillets and a pinch of chilli flakes (optional) Roast for a further 15 minutes or until the cod is cooked through. Scatter with fresh basil leaves and serve with rice.
