No Bake Strawberry Chocolate Cheesecake Cups

These little cuties are made with cottage cheese and our Optimized Strawberry Whey, giving them a protein kick and making them the perfect creamy and decadent sweet treat!

Ingredients:
For the crust
1 cup walnuts
6 Tbs. TH baking blend
1/4 cup cocoa powder
1/4 cup TH Gentle Sweet
Generous pinch Mineral Salt
3 Tbs. coconut oil

For the filling
1 cup 2% fat small curd cottage cheese
1/4 cup TH Optimized Strawberry Whey Protein Powder

1. Add all the crust ingredients to a food processor and pulse until the mixture is roughly smooth and starts to stick together.
2. Divide the mixture into a 12 cup muffin tin (roughly 2 Tbs. Per muffin cup) and press the mixture down and on the sides of each muffin cup. Place in the freezer to set.
3. Add all the filling ingredients to a high speed blender and blend until smooth. Divide the filling evenly into all the crusts. Place back in the freezer to set for about 10 minutes. Top with chopped strawberries and a drizzle of stevia sweetened melted chocolate. Store in the fridge.
