No Pasta, High-Protein Zucchini Ravioli 🥒🍅

Ingredients

Zucchini Ravioli
• 2 medium zucchini (thin long slices)
• ¾ cup paneer (crumbled)
• 1 cup spinach (blanched & finely chopped)
• 1 chilli (finely chopped)
• ½ tsp chilli flakes
• ½ tsp oregano
• Salt to taste

Garlic Tomato Sauce
• 3 tomatoes
• 2 dried red chillies
• 1 tbsp watermelon seeds
• 1 tbsp oil
• 9–10 garlic cloves (finely chopped)
• 1 onion (finely chopped)
• ½ tsp chilli flakes
• ½ tsp oregano
• Pinch of sugar
• ¼ cup water
• Salt to taste

Method
• Slice zucchini thin and keep aside.
• Mix paneer, spinach, chilli, chilli flakes, oregano & salt.
• Arrange 2 strips vertical + 2 horizontal, add filling in centre & fold into ravioli.
• Boil tomatoes, dried chillies & watermelon seeds. Cool, peel & blend smooth.
• Sauté garlic & onion in oil. Add salt, chilli flakes & oregano.
• Add tomato puree, water & sugar. Simmer.
• Place ravioli in sauce, sprinkle extra paneer on top.
• Cover & cook till zucchini softens.
• Finish with chilli flakes & serve warm.
