Sometimes you need to eat an entire box of spinach, and this luscious green goddess pasta sauce is the best way to do it

Ingredients

generous drizzle of olive oil

1/2 medium onion

3 cloves of garlic

1 box of spinach (5 oz)

1 can of coconut milk

1/2 cup soaked cashews (75 g)

juice of 1 lemon

3 tbsp nutritional yeast

1/2 can of white beans

a handful of basil (1 oz)

1 tsp salt or more to taste

1/2 tsp pepper

1 box of pasta (use chickpea pasta for extra protein)

Ricotta Ingredients (optional)

1 box of firm tofu (14 oz)

juice of 1 lemon

1 tbsp tahini

½ cup nutritional yeast

1 tbsp basil

1 tbsp garlic powder

1 tbsp onion powder

1 tsp salt

½ tsp pepper

This will make a pretty large portion of the sauce, so you can store the rest in a jar in the fridge and enjoy it with another box of pasta, or just have an extra saucy pasta!

❖Directions

In a pan over medium heat, drizzle some olive oil, then add the onion and garlic and cook until the onion turns translucent. Add the spinach and cook until it is soft and wilts down.

Transfer everything from the pan to a blender (allow it to cool a little first). Add the coconut milk, cashews, lemon juice, nutritional yeast, beans, basil, and salt and pepper. Blend for several minutes until creamy and smooth.

Cook your pasta according to the package instructions, and add the sauce on top.

For some extra cheesiness and protein, blend all of the ricotta ingredients in a blender, and top the past with it!
