Ingredients
4 very ripe bananas
2 eggs
½ cup honey
½ cup Trunative (or any sugar-free sweetener)
½ cup olive oil
4 tbsp buttermilk
1 tsp vanilla extract
Dry Ingredients
100 g oat flour (blend rolled oats)
50 g protein powder (unflavoured, vanilla or chocolate)
65 g maida
1 tsp cinnamon powder
1 tsp baking soda
1 tsp salt
2 tbsp cocoa powder
Add-ins
Sugar-free chocolate chips or chunks
Walnuts for topping

Method
1. Preheat oven to 350°F / 175°C and line a loaf tin.
2. Mash the bananas in a bowl.
3. Add eggs, honey, sugar-free sweetener, olive oil, buttermilk and vanilla. Mix well.
4. In another bowl combine oat flour, protein powder, maida, cinnamon, baking soda, salt and cocoa powder.
5. Fold the dry ingredients into the wet mixture until just combined.
6. Stir in sugar-free chocolate chips.
7. Pour batter into the loaf tin and top with walnuts.
8. Bake for 55–65 minutes until a skewer comes out clean.
9. Let cool slightly before slicing.
