My Quick & Easy Low-Calorie, High-Protein Chicken Quesadilla:
465 calories | 54 g protein
Ingredients
• Low-calorie tortilla (I use Mission Carb Balance)
• 100 g rotisserie chicken (dark meat, skin on is what i do for best taste. For leaner macros you can use white meat or remove skin & would still taste good)
• Fat-free shredded cheese
• 2% milk-fat shredded cheese
• Seasonings of choice (to taste)
• Salt (lightly, for flavor)
How I Make It
1. Pull 100 g of rotisserie chicken and shred it.
2. Season the chicken to taste (it’s already cooked, so taste as you go).
3. Place chicken evenly on the tortilla.
4. Mix:
• 28 g fat-free cheese
• 28 g 2% milk-fat cheese
Add a small pinch of salt.
5. Sprinkle the cheese mix over the chicken.
6. Fold the tortilla into a quesadilla.
7. Cook on a George Foreman (or pan) until golden and melted.
