Today, I am going to share 4 ultra-lazy dinners that all cook up with minimal effort AND minimal cleanup!
These are perfect for your busy weeknights, when your energy is running on empty, or when you want homemade without all the effort.
We start with a Sheet Pan Chicken Fajita dinner, made even easier by using rotisserie chicken! You will never want to do fajitas the hard way again!
Next, we throw together the ultimate comfort food sheet pan dinner, Chicken Bacon Ranch Potato Sheet Pan Dinner. Delish and super easy.
Then we are going to put a brand new spin on grilled ham and cheese sammies. You get the crisp, golden flavor of a griddled cheese, but the oven does all the work in this Grilled Ham & Cheese Sheet Pan Sandwiches recipe.

🌮 1. Sheet‑Pan Chicken Fajitas

• 2–3 cups rotisserie chicken, shredded or chopped
• 3 bell peppers, sliced
• 3 onions, sliced
• 2–3 tbsp olive oil
• 2 tbsp fajita seasoning (or chili powder, cumin, garlic powder, paprika, salt)

1. Prep the veggies
Toss sliced peppers and onions with olive oil and fajita seasoning. Spread on a sheet pan.
2. Roast the veggies
Bake at 425°F for 12–15 minutes until softened and starting to brown.
3. Add the chicken
Toss the rotisserie chicken with a little oil + seasoning. Add to the pan and bake 5 minutes to warm through.
4. Serve
Spoon into tortillas or over rice. Add lime, avocado, salsa, or sour cream.

🥓 2. Sheet‑Pan Chicken Bacon Ranch

• 1½–2 lbs chicken breast or thighs, cut into bite‑size pieces
• 4–6 slices bacon, chopped
• 3 lb potatoes, diced
• 3 tbsp olive oil
• 2 tbsp ranch seasoning
• Salt & pepper
• Optional: shredded cheddar, green onions, ranch drizzle

1. Prep the pan
Add potatoes, chicken to a sheet pan. Drizzle with olive oil and sprinkle ranch seasoning, salt, and pepper.
2. Add bacon
Scatter chopped bacon over the top.
3. Bake
Bake at 425°F for 25–30 minutes, stirring once, until chicken is cooked and potatoes are tender.
4. Finish
Add cheddar and let melt for 2 minutes. Top with green onions or a light ranch drizzle.

Sheet Pan Ham & Havarti on Sourdough
• 8 Sourdough slices
• 8 oz Sliced ham
• 4 oz Havarti cheese
• Mayo
• oil

1. Lay sourdough slices on a sheet pan. Spread a thin layer of mayo on each slice.
2. Add ham + Havarti to half the slices. Top with the remaining slices.
3. Mix melted butter with garlic powder + onion powder. Brush tops with oil lightly.
4. Bake at 350°F for 10–12 min until warm and melty.

🥔 4. Sheet‑Pan Chicken, Brussels Sprouts & Potatoes

• 1½–2 lbs chicken thighs or breasts
• 2 bags Brussels sprouts
• 1 lb baby potatoes, halved
• 3 tbsp olive oil
• 1 tsp basil
• 1 tsp Italian seasoning
• Salt & pepper

1. Prep the veggies
Add potatoes and Brussels sprouts to a sheet pan. Drizzle with olive oil and season with garlic powder, paprika, Italian seasoning, salt, and pepper.
2. Add chicken
Nestle chicken pieces between the veggies. Drizzle lightly with oil and season again.
3. Bake
Bake at 425°F for 30–35 minutes, until chicken reaches 165°F and potatoes are tender.
4. Finish
Squeeze lemon over the top or sprinkle parmesan.
