– 220 g of water
– 150 g semolina
– 150 g bread flour
– 60 g sourdough starter
– 6 g salt
Mix half the water with the semola and let it autolyze for at least 3 hours. After 2.5 hours, mix the other half of the water with the sourdough starter and bread flour and let it autolyze for 30 minutes. Mix everything together, add salt, and knead.
