Stuffed Eggplant with Ricotta Recipe 🍆🧀
Ingredients
2 large eggplants
1 cup ricotta cheese
½ cup mozzarella cheese
¼ cup parmesan cheese
1 egg
2 garlic cloves (minced)
Fresh basil or parsley
Salt & black pepper
Olive oil
2 cups tomato sauce / marinara
Method
Cut eggplants lengthwise and scoop out some flesh.
Brush with olive oil and bake at 200°C for 20 minutes.
Chop the scooped eggplant flesh and sauté with garlic.
Mix ricotta, mozzarella, parmesan, egg, herbs, and cooked eggplant.
Fill the eggplant shells with the mixture.
Add tomato sauce in baking dish, place stuffed eggplants on top.
