Most people think the Bombay sandwich is just a loaded vegetable sandwich. It is not. The detail that makes it is chaat masala used as a seasoning on every single layer — not sprinkled on top at the end. It changes how every bite tastes because the spice is built into the structure, not sitting on the surface.
That one detail took something simple and made it feel intentional. That is what I was trying to recreate here — using the whole wheat sourdough we baked from scratch on this channel.
The bread was dense. Not the open crumb I wanted. But toasted and loaded like this, it held up to every layer without falling apart. Sometimes the imperfect bake makes the best meal.
