Happy Taco Tuesday! Alane and Stephanie both used tortilla wraps in their lunches today with Stephanie making an easy thai chicken wrap with a jar-shaken thai peanut sauce and Alane making some quick breakfast tacos. Celebrate Taco Tuesday with one (or both) of the recipes below!
THAI CHICKEN WRAP
Ezekiel wrap or wrap/tortilla of choice
Chicken
Diced celery
Shredded carrots
Spinach
Superfood Veggie Cake from Veggies Made Great, cut into pieces
Thai Peanut sauce
Add everything to the wrap and enjoy!
JAR-SHAKEN THAI PEANUT SAUCE
1/4 cup peanut butter
1 tablespoon soy sauce
1 tsp rice vinegar
1/2 tablespoon maple syrup (or to preference)
1 tablespoon water (or more depending on preference of consistency)
1/8 tsp ginger
1/8 tsp red chili flakes
1/4 tsp salt
Add everything to a jar and shake until everything is thoroughly combined.
BREAKFAST TACOS
Siete Almond Flour Tortillas
Veggie Bacon & Potato Frittata
Cilantro
Avocado
Lime
Yellow Birds Habanero Hot Sauce
