🛒 Ingredients

🧈 120 g butter, melted (do not substitute the butter in this recipe)
🤎 90 g brown sugar
🍃 7 g low-calorie sweetener (baking-friendly)
🥚 2 large eggs, room temperature
🌼 ¼ tsp vanilla
🌾 200 g all-purpose flour
🥄 1 tbsp cornstarch
🥄 1 tsp baking powder
🧂 2 pinches of salt
🍒 160 g pitted fresh cherries
🍫 50 g dark chocolate (about 70%), chopped

👩‍🍳 Instructions

1️⃣ Let the butter and eggs come to room temperature before starting.

2️⃣ Whisk together the melted butter, brown sugar, and low-calorie sweetener until well combined. Add the eggs and vanilla, then whisk until smooth.

3️⃣ Sift together the flour, baking powder, and salt. Fold the dry ingredients into the wet mixture gently with a spatula to keep the batter soft and tender.

4️⃣ Toss the cherries with the cornstarch, then gently fold them into the batter along with the chopped dark chocolate.

5️⃣ Transfer the batter to a 20 cm (8-inch) square or rectangular baking pan and smooth the top.

🔥 Baking

⚡ Electric oven: 160°C (320°F)
🔥 Conventional/Gas oven: 175°C (350°F)

⏱️ Bake for about 45 minutes, or until the top is lightly golden and a toothpick inserted into the center comes out with a few moist crumbs.
