Ingredients:

For Madras Broccoli Soup:
• 1 tbsp Coconut Oil
• 1/4 tsp Mustard Seeds
• 1 tsp Ginger
• 3 Curry Leaves
• Salt To Taste
• 1 Green Chilli
• 1 cup Broccoli Florets
• 1 cup Vegetable Stock
• 1-2 tsp Madras Curry Powder
• Black Pepper Powder To Taste
• 1 tbsp Fresh Cream

For Broccoli Rice:
• 1/2 cup Cooked Rice
• 1 1/2 cup Broccoli
• 1/2 cup Sweet Corn
• 2 Spring Onions
• 1 tsp Salt
• 1/4 tsp Black Pepper
• 1/2 tsp Curry Powder
• 1 tbsp Sesame Oil

Method Of Preparation

Madras Broccoli Soup
1. Take a pan, add coconut oil, mustard seeds, let it crackle and Stir it.
2. Add ginger, green chilli, few curry leaves and Saute until fragrant.
3. Now add a cup of broccoli florets, saute for a minute, add madras curry powder, mix it well, cup of vegetable stock and Bring it to a boil.
4. Blend it into a smooth puree and then pour this broccoli puree into a kadhai.
5. Stir cook it for a minute, then add salt to taste along with black pepper and Mix it well.
6. Pour in the vegetable stock, mix it well and take it out in a bowl.
7. Garnish with a broccoli and Top it with fresh cream.
8. Ready to Serve with Broccoli Rice.

Broccoli Rice
1. Take a mixer jar, add broccoli and pulse till rice like consistency.
2. In a kadhai, pour in some sesame oil, riced broccoli and Saute it for a minute.
3. Add boiled and crushed sweet corn, salt to taste, black pepper and Stir fry for about 1-2 minutes.
4. Now put a small cup of cooked rice and Cook for another minute or so.
5. Add curry powder and Mix it well.
6. Take it out on a plate and Garnish with spring onions.
7. Ready to Serve with the Soup.
