Hey everyone!

Spend the week with me, showing you everything I ate for dinner. I am 27 weeks pregnant and wanting to give you some healthy dinner inspo! If I can cook these then you definitely can, they’re super easy and delicious! I hope everyone is staying safe in this difficult time…COVID-19 (coronavirus) has made it difficult for us to get groceries at the moment, so I appreciate food even more right now. This video definitely held me accountable to cooking every night and my body is thanking me for it. Our favourite is shepherds pie…. What do you think yours will be?

P.S I had to sit on the couch most nights, due to my ‘at home office’ taking the space of the kitchen table LOL

What I cooked:

Chicken and Chorizo Jambalaya

Ingredients
1 tbsp olive oil
2 chicken breasts, chopped
1 onion, diced
1 red pepper, thinly sliced
2 garlic cloves, crushed
75g chorizo, sliced
1 tbsp Cajun seasoning
250g long grain rice
400g can plum tomato
350ml chicken stock
Method
Heat 1 tbsp olive oil in a large frying pan with a lid and brown 2 chopped chicken breasts for 5-8 mins until golden.
Remove and set aside. Tip in the 1 diced onion and cook for 3-4 mins until soft.
Add 1 thinly sliced red pepper, 2 crushed garlic cloves, 75g sliced chorizo and 1 tbsp Cajun seasoning, and cook for 5 mins more.
Stir the chicken back in with 250g long grain rice, add the 400g can of tomatoes and 350ml chicken stock. Cover and simmer for 20-25 mins until the rice is tender

Homemade Falafel Burgers

Ingredients

2 cans of chickpeas
1 tsp garlic paste
Lemon juice
2 tsp cumin
Salt, pepper
1 tsp of harissa paste
1 cup of bread crumbs
2 large eggs
Olive oil

Method
Blend chickpea, garlic paste, lemon juice, cumin and harissa paste

Combine chickpea mix with eggs and breadcrumb

Let mixture sit for 30-2 hours

Form into burger shape and fry on pan

Optional:

Add burgers into pita pocket, add hummus, aioli, avocado, cheese, spinach and tomato.

Ny version of shepherds pie

Ingredients:
Mince meat
Carrot
Potato
1 tsp garlic paste
1 tsp sriracha
2 tsp Worcestershire sauce
Beef stock
Puff pastry
Cheese

Method:

Combine mince meat, garlic, sriracha, Worcestershire sauce and beef stick together. Let simmer.

Boil potatoes, once boiled mash them with butter and milk (I used oat milk)

Defrost pastry and put into dish

Layer meat then potato and add cheese on top

Cook on 160 (Fan forced) for 20-30 minutes or until crispy on top

BTW: All of these recipes say to put onion in there, but we have an intolerance to onion and
chose to leave it out!
