Learn how to make Roasted Spaghetti Squash with Ground Turkey Meat Sauce. I love this recipe because it’s gluten-free, low-carb AND an easy healthy dinner idea. You can definitely used mushrooms as an alternative to ground turkey if you are vegetarian. The great part about this recipe is there are so many ways to eat spaghetti squash. Ingredients:
-1 spaghetti squash (sliced longways)
-1 ½ cups of red onion (Alternative: white or yellow onion)
-1-2 tbsp of minced garlic
-1-2 tbsp of fresh oregano (Alternative: dried oregano)
-1 tbsp of paprika
-1-2 lbs of ground turkey (Feel free to use more if you need more protein!)
-Salt to taste
-Black pepper to taste
-1 tbsp of garlic powder
-1 16 oz. can diced tomatoes
-Red pepper flakes (optional for garnish)
-Italian seasoning
-Olive oil

Instructions:
1) Preheat the oven to 400 degrees.
2) Wash the squash and cut long ways. Scrape the seeds in the inside with a spoon.
3) Cover the baking pan with foil and drizzle olive oil on the inside. Season with salt and black pepper. Flip face down and bake for 40 minutes.
4) While the squash is baking, heat up a skillet to medium high heat and drizzle olive oil.
5) Add onions, ground turkey, and minced garlic. Season with salt, pepper, red pepper (optional), garlic powder, paprika, oregano (fresh or dried), Italian seasoning. Then add the diced tomatoes.
6) After 40 minutes, take the squash out and scrape the insides with a fork. Add the ground turkey meat sauce on top. Garnish with fresh oregano (or dried) and ready to serve!
