Quick, easy & low in calories, this FakeAway healthy pizza can be vegan friendly with a simple swap of the Mozzarella for Vegan Cheese & ensure the puff pastry is Vegan Friendly.
MAKES 6-8 PORTIONS
INGREDIENTS:
1 red onion (peeled & quartered)
1 yellow pepper (seeded & roughly chopped)
1 courgette (sliced)
Cherry tomatoes
(or cheat and buy a Mediterranean vegetable oven-roast ready dish)
Drizzling of avocado oil
1 teaspoon of oregano
1 ball of mozzarella
A handful of fresh basil leaves
1 sheet of puff pastry (enough to cover a rectangular baking tray – vegan option available in most supermarkets)
Thick balsamic vinegar (or normal if you cannot find thick)
METHOD:
Pre-heat the oven to 180 (or 200 if not fan).
Spread your vegetables on a baking tray lined with baking or grease proof paper.
Place the tray (or your ready-prepared oven roasting tray from the shop) into the oven for 25 minutes until tender.
Remove the tray from the oven and place on a heat-proof surface or on top of the hob.
Lay your sheet of puff pastry over the top of the vegetables so they are completely covered.
Tuck in the edges of the pastry to form a seal with the baking paper.
Return to the oven for 20 minutes or once the puff pastry has risen & is golden brown.
Remove from the oven and place a wire rack or baking tray on top of the risen pastry.
Lift both trays up and turn upside down.
Remove the tray you used to bake in the oven, and your pizza is now the right way up.
Tear the mozzarella into small chunks and dollop on top of the vegetables.
Tear the basil leaves and sprinkle on top.
Add a splash of your balsamic vinegar.
