In this video I show you guys how to create this delicious healthy, low calorie and sugar free pumpkin loaf that is inspired by Starbucks! This recipe makes 12 slices, each being 130 calories! As fall is approaching its time to indulge in some delicious fall treats. My goal with this recipe is to provide those who are on a weight loss journey with a delicious fall treat that doesn’t require them to compromise their weight loss progress and goals! It’s important to still enjoy the foods you love while still staying on track and this recipe will help you do just that! HEALTHY LOW CALORIE & SUGAR FREE PUMPKIN LOAF RECIPE
Ingredients:
1 cup pumpkin puree
2 large eggs
1/4 cup canola oil
1/4 cup buttermilk
1/3 cup water
1 3/4 cups flour
1 cup Swerve granular sugar (or regular sugar if you prefer)*
1 tsp baking soda
1/2 tbsp baking powder
1/2 tsp salt
1 tsp cinnamon
1 tsp pumpkin pie spice
2 tbsp pumpkin seeds
Directions:
1. Preheat oven to bake at 350°F
2. Mix dry ingredients together in large bowl using a whisk: flour, sugar, baking soda, baking powder, salt, cinnamon, pumpkin pie spice.
3. In a separate bowl mix wet ingredients together using an electrical mixer on low: pumpkin puree, eggs, canola oil, buttermilk, water.
4. Combine dry and wet ingredients together using the electrical mixer on low.
5. Line 1 loaf pan with parchment paper or grease the pan. Poor entire batter into pan. Sprinkle pumpkin seeds on top evenly.
6. Bake for 50-55 mins.
7. Let it cool for 20 minutes. Slice into 12 even slices and enjoy! (130 calories / slice)
*Please note using regular sugar will increase the calories
