Poached Eggs in Tangy Tomato Sauce
Ingredients
4 Eggs
5 Tomatoes
2 Capsicum
1 Large Onion
2 Chillies
Coriander
1 Tsp Cumin
1 Tsp Paprika/Kashmiri Chilli
2 Tbsp Olive Oil
Salt to taste
The Process
1. Chop the Onions & dice the Capsicum.
2. Make Tomato Puree
3. Heat the pan and add olive oil (Make sure the pan is not too hot otherwise olive oil will burn).
4. Add Cumin Seeds. Let them crackle.
5. Add the chopped Onions and fry till they are translucent.
6. Add the diced Capsicum.
7. Keep stirring and frying till the Capsicum loses its raw flavour.
8. Add the Tomato Puree. Give it a good stir.
9. Add Salt & Paprika. Stir again.
10. Cover & Cook for 15 Mins. (On low flame)
11. Check for consistency. It should be like a thick slush.
12. Make Pockets and add cracked Eggs.
13. Cover & Cook for 5 Mins. (On low flame)
14. Check if the Eggs are done. The whites should be set.
15. Garnish with Coriander & Chillies
