Chicken parmesan…healthy? Well with a few substitutions, you can still enjoy this classic yummy, cheesy, and crispy dish and not feel an ounce of guilt! This healthy chicken parmesan like many of my dishes has become one of our favorites! Its low carb since we are substituting the pasta for zucchini, turned zoodles! This is a great low carb dinner idea for any night of the week! Its also low in calories, so this is the perfect delicious meal for weight loss. Chicken parmesan can be healthy AND tasty!! Keep the ingredients simple and follow along with me! You’ll soon be cooking up your own healthy and delicious chicken parmesan too!

Ingredients:

3 zucchinis
1/4 cup panko bread crumbs
1/4 cup Parmesan cheese
1 teaspoon dried Italian herbs
1 teaspoon red pepper chili flakes
1 teaspoon garlic powder
1 teaspoon oregano
salt and pepper
2 tablespoons oil
4 chicken breasts (about 1 pound)
1 1/2 cups Tomato basil tomato sauce (or make your own!)
4 slices fresh mozzarella cheese
parsley
