A tasteful red cabbage coleslaw salad , a healthy superfood recipe, easy to make and super delicious!

INGREDIENTS:
Red Cabbage
Kosher Salt
Sugar
Lemon Juice
Mayonnaise

INSTRUCTIONS:
1. Prepare the red cabbage- cut into quarters and remove the part of the white core, then cut into strips as thin as possible
2. Transfer all the chopped cabbage into a bowl with a strainer, then add salt and sugar to taste and began to mix and squeeze the cabbage with your hands, the salt is supposed to migrate all the liquids from the cabbage and the squeezing action is supposed to soften the cabbage. Do this for 3 minutes, then leave it for half an hour to an hour
3. Prepare the vinaigrette, simply mix the mayonnaise with the lemon juice
4. Add the vinaigrette to the cabbage and mix it all together.

The salad will keep well for up to 4 days if covered well with cling wrap or placed in a good quality glass container.
