✨Ingredients and Notes ✨
#1 Shredded Sweet Potato with Homemade Vegan Ricotta
for the ‘cheese’:
2 blocks firm tofu (a total of 400g = 14.01oz)
3 tbsp corn starch
1 heaping tbsp nutritional yeast
2 1/2 tbsp olive oil
2 tbsp white wine vinegar
1 tsp salt, more if needed (I usually add an extra small pinch)
½ tsp garlic powder
¼ tsp turmeric
½ cup + 2 tbsp non dairy milk (125ml + 2 tbsp)
1 handful of fresh basil
1 handful of fresh spinach
→ enough ricotta for 4 servings
served 1 shredded, peeled sweet potato per serving
1-2 tsp of olive oil
optional: 1 tsp vegan butter
seasoning, salt to taste
also serve w cherry tomatoes, spring onions, toast …
#2 Chocolate Chip Tik Tok Style Baked Oats
1 cup oats, small cut (90g)
â…“ tsp salt
1 tsp baking powder
1/4 tsp cinnamon
1 tsp vanilla
½ cup non dairy milk (125ml)
2 tsp apple cider vinegar
3 ¼ tbsp applesauce
2 tbsp liquid sweetener
1 1/2 tbsp sunflower seed oil
2 tbsp chocolate chips, one added into the mix the other sprinkled on top (or more if you wish)
Bake for 25 – 30 min 180C in 2 small bowls or ramekins, preferably greased
→ serves 2
#3 Cinnamon-y Milkshake (aka Cauliflower Smoothie)
~ 1 ½ cups frozen cauliflower (130g)
3-4 dates, soaked and/or boiled
â…“ cup cashews, soaked and/or boiled (50g)
1 tsp vanilla
â…“ tsp cinnamon
2 tsp ground flax seeds
2/3 cup non dairy milk (160ml)
a pinch of salt
1 tsp unsweetened cocoa powder
2 tsp maple syrup
→ serves 1-2
#4 Chunky Monkey Breakfast Bowl
1-2 bananas, cut in half
1-2 tsp coconut oil or regular oil or vegan butter
pinch of cinnamon
pinch of salt
bake at 200C for 25-30 min
serve with vegan yogurt, oats, walnuts, granola …
and this chocolate sauce here:
1 heaping tbsp almond butter
2 tsp unsweetened cocoa powder
1 tsp (chocolate) protein powder, optional
1 ½ tsp maple syrup or other liquid sweetener
1-2 tbsp non dairy milk, or more to adjust the consistency if needed
also pinch of salt
→ serves 1-2
#5 Wholesome Whole Wheat Oat Bread
300g whole wheat flour (2 ½ cups)
240g white spelt flour (1 cup)
1 cup small cut oats (90g)
3 tsp salt
50g vegan butter at room temp = 1.76oz
1 ½ cups non dairy milk (375ml)
1 packet of dry active yeast = 7g = 2 ¼ tsp
if needed a few more tsp of water or olive oil
a lil bit of olive oil to brush the dough
a lil bit of non dairy milk or water to brush the dough after rising
a sprinkle of flour for the top
→ make sure to let the dough rise in either a bowl or best case scenario inside a loaf pan, that way it already achieves the bread-like shape!
bake for 45-50 min at 180 C
yields one large loaf of bread, cut slices and freeze those!
