Join me as I share 3 easy and healthy dinners and a recipes for a sweet treat! My family follows a low-carb lifestyle (sometimes keto) and 3 of these recipes can be made low-carb. I start with a low-carb sheet pan chicken and broccoli, followed by a crockpot/slow cooker chicken lo mein (who needs takeout?!?), a Big Mac Salad that’s weigh healthier than eating an actual Big Mac (and it’s low carb!) and finally some candied pecans that I make every year during the holidays to share with family and friends. I also share a way to make these pecans low-carb/keto!

Recipes:
McCormick Farmer’s Market Sheet Pan Chicken and Vegetables:
Slow Cooker Chicken Lo Mein:
Big Mac Salad:
1 lb ground beef
1/2 yellow onion, diced
1 red onion, sliced thin
1 head Romaine lettuce, chopped
3 baby dill pickles, sliced
Thousand Island dressing
Shredded Cheddar Cheese
Sesame seeds
Salt and pepper (or other seasoning for the beef)
Brown ground beef in a skillet along with the yellow onion. Drain excess fat. Season beef as desired
In a large bowl, assemble lettuce, cheese, red onion and pickle. Top with cooked beef/onion mixture. Dress salad with Thousand Island and sprinkle on sesame seeds.
