The first salad is an arugula caprese salad, the second is a Parisian style salad with cranberry and candied walnuts. The last is the PERFECT summer pasta salad with fresh lemon, mozzarella, and tomatoes. These salads are also a great healthy options that will help you jazz up your lunch or dinner. Lemon Pasta Salad
– 8oz Cooked Penne Pasta (al dente_
– 2 Lemons
– Zest of 1 Lemon
– 1 cup Diced Cherry Tomatoes
– 1 cup Small Mozzarella Balls
– Extra Virgin Olive Oil
– Kosher Salt
– Black Pepper
– Fresh Basil
Arugula Caprese Salad
– 8 oz Fresh Arugula
– 1 cup Diced Cherry Tomatoes
– 1 cup Small Mozzarella Balls
– 1 tbsp Basil Pesto
– Balsamic Glaze to Taste
– Extra Virgin Olive Oil
– Kosher Salt
– Black Pepper
Parisian Salad
– 1 Head Red Leaf Lettuce
– 1 Shallot Diced
– 2 tbsp White Balsamic Vinegar
– 1/4 cup Extra Virgin Olive Oil
– 1/2 tbsp Dijon Mustard
– 3 tbsp Feta Cheese
– 1 tbsp Dried Cranberries
– 1 tbsp Candied Pecans
– 1 Apple or Pear
– Kosher Salt
– Black Pepper
