You won’t believe how delicious this cabbage soup is. Perfect for a 5-2 diet, recipe below. (Vegan)
This cabbage soup makes a perfect very low-calorie meal for your fasting day on our 5-2 Lifestyle Diet. Or you could substitute a couple of meals a day to lose weight quickly.
It makes a big pan full, (about 12 servings), and is about 100 calories a serving.

Ingredients
2 tablespoons vegetable oil
6 chopped onions
3 bell peppers (medium, green, yellow & red, diced small)
14.5 oz. can of chopped tomatoes
2 lb. cabbage (roughly chopped)
6 cups water
3 vegetable or meat flavoured stock cubes, ( if the flavour is not strong enough at the end you can add another stock cube).
Onion salt, herbs, garlic powder or any herb or spice, to taste)
Salt
Ground black pepper

This is about 12 servings so a normal sized bowl would be about 100 calories.

INSTRUCTIONS:
In a large pan heat the oil.
Add the onions and bell peppers and cook for a few minutes until softened.
Add the tomato and cook for another minute.
Add about 6 cups of water.
Add the stock cubes.
Add the cabbage and bring to the boil again.
Reduce heat to a very low simmer, season with herbs and spices to taste and ground black pepper.
Cover and cook at a simmer for 1 hour if you like more texture to your soup, otherwise cook for 2 hours very slowly.
Once cooked then season to taste with the salt.
Note: This would be perfect to cook in a slow cooker and is freezable.
