Dry Ingredients:
1 cup whole wheat flour
¾ cup all purpose flour
¼ cup ground flax seed
1 tsp baking powder
½ tsp salt
½ tsp cinnamon powder
½ tsp ginger powder
¼ tsp ground nutmeg
¼ cup walnuts chopped
¼ cup pecans chopped
¾ cup raisins
¼ cup dark chocolate chunks
Wet Ingredients:
1 cup brown sugar
½ cup oil
¼ cup honey
2 eggs
1 tsp vanilla
2-3 three bananas, mashed
Directions
Grease the loaf pan with cooking spray and place the liner in the pan.
In a large bowl, combine the flour mixture listed under dry ingredients.
In another medium bowl, mix everything listed under the wet ingredients; sugar, oil, egg, honey and vanilla. Mash the bananas and add it to the cream mixture.
Combine both the cream mixture and the flour mixture well.
Bake at 350°oven for about 35 – 40 minutes, or until the tooth pick inserted comes out clean.
