| MOROCCAN TOFU SALAD |
Recipe makes one serving
Macros per serving:
395 cals – 21g fat – 30g carbs – 26g protein

Ingredients:
190g firm tofu (20g protein)
1-2 tbsp oat milk or other
1-2 tbsp spice blend – I used a Moroccan blend, so good!
2 cups arugula
½ cup grated carrot
¼ cup red onion
¼ cup kalamata olives
¼ cup fresh dill
½ cup sauerkraut

Dressing:
3 tbsp hummus
1 tbsp apple cider vinegar
2 tsp hot sauce
1 tsp date syrup – discount in highlights!
2-3 tbsp oat milk, or other

Recipe:
Preheat oven to 375 F and line a baking tray with parchment paper
In a small bowl add: tofu – broken into chunks, 1 tbsp milk, pinch salt, and toss to coat
Add 1-2 tbsp moroccan spice blend and toss to coat
Spread across baking tray and bake for 18-20 minutes or until crispy
To a salad bowl add arugula, shredded carrots, red onion, olives, dill, sauerkraut, set aside
Add all your dressing ingredients to one bowl and whisk to combine
Pour over salad and top with hot tofu
