Hey friends! Welcome to our channel! In this episode we will prepare a Turkish inspired recipe: carrot mezze a delicious dip with carrots, yogurt and toasted walnuts. Give it a try and tell us your opinion! We will need 4 carrots, washed and peeled. Grate coarsely the carrots.
Heat a frying pan over medium high heat and add 2 tbsp olive oil. Add 5 garlic cloves. Add the carrots and saute for 8-10 minutes. Season with 1 tsp salt and stir occasionally. Don’t stir too much we don’t want to mash the carrots. Take out the garlic cloves.
Transfer the carrots to a bowl and set aside to cool down slightly. In a pan will roast 1/2 cup walnuts. Mash the garlic and add it in the bowl. Chop roughly the toasted walnuts. Add them in the bowl alongside the other vegetables.
Add 350 g yogurt. We use soy yogurt but feel free to use whatever kind of yogurt you prefer. Mix all the ingredients together. Taste and season with salt and freshly ground black pepper to your own taste. Optionally you can add a squeeze of lemon juice.
