Hey Foodies! Here’s my Vegan version of Katsu Sando or Japanese Katsu Sandwich . This is made with thick cut marinated tofu, breaded in a crispy panko, and sandwiched between two slices of bread. It makes for a satisfying, and very delicious meal. Happy cooking!

Ingredients:
2 blocks pressed tofu
2 tsp mushroom powder
salt and pepper
for coating:
1/2 cup flour
2 tbsp nutritional yeast
salt and pepper
3/4 cup water
toasted bread crumbs
tonkatsu sauce:
3 tbsp ketchup
1 tbsp vegetarian oyster sauce
3 tbsp low sodium soy sauce
Assemble:
bread loaf
1-2 tsp mustard
chopped cabbage
tonkatsu sauce
tofu katsu
