*Ingredients:*
• 1 cup rava (semolina)
• 1/2 cup finely chopped purple cabbage
• 1 cup yogurt
• 1/2 tsp mustard seeds
• 1/2 tsp urad dal (black gram)
• 1/2 tsp chana dal (split Bengal gram)
• 1 tsp Cashew Nuts
• 1/2 tsp Jeera (a) Cumin Seeds
• 2 Green Chillies
• 1/2 tsp Ginger
• A pinch of asafoetida (hing) optional
• A few curry leaves
• 1 tbsp oil
• Salt to taste
• Water as needed
• 1/2 tsp baking soda or Eno fruit salt
• Oil for greasing the idli molds
*Instructions:*
1. *Prepare the Batter:*
– Dry roast the rava in a pan until it turns slightly golden and aromatic. Let it cool. (skip this part if you have roasted rava)
– In a mixing bowl, combine the roasted rava, yogurt, and water to make a thick batter. Let it rest for 15-20 minutes.
2. *Prepare the Purple Cabbage:*
– Finely chop the purple cabbage and blend it into a smooth paste using a little water.
– Add the purple cabbage paste to the rava batter and mix well.
3. *Tempering:*
– Heat oil in a pan, add mustard seeds, jeera, urad dal, chana dal, cashew nuts, asafoetida, and curry leaves, chillies, ginger. Sauté until the dals turn golden brown.
– Add the tempering to the batter and mix well. Add salt to taste.
4. *Add Baking Soda:*
– Just before steaming, add baking soda or Eno fruit salt to the batter and mix gently.
5. *Steam the Idlis:*
– Grease the idli molds with a little oil.
– Pour the purple rava idli batter into the molds.
– Steam the idlis for 12-15 minutes or until a toothpick inserted comes out clean.
6. *Serve and Enjoy:*
– Remove the idlis from the molds and serve hot with your favorite chutney or sambar.

• Adjust the amount of purple cabbage for desired color intensity.
