📝 INGREDIENTS (enough for 5-6 servings)
• 500g (1 pound) chicken breast
• 1 cup water (or just enough to cook the chicken)
• Seasonings for boiling chicken: pepper, 1 bay leaf, and salt
• 1 tbsp butter or oil
• 1 small onion, thinly sliced/finely chopped (sub. 1 tsp onion powder)
• Chopped spinach (optional, for added nutrition)
• 1 tsp chili flakes (adjust to taste)
• 2 cloves garlic, minced (or 1/2 tsp garlic powder)
• ½ tsp paprika
• ½ tsp black pepper
• ½ tsp dried herb (thyme/oregano)
• ½ tsp any other preferred seasoning (curry powder, garam masala, Middle Eastern all-spice (Baharat), Cajun seasoning, or BBQ seasoning)
• 2 tbsp all-purpose flour or corn flour
• 1 cup milk
• Salt to taste
• 1/2 cup shredded cheese (cheddar or mozzarella, or 2-3 tbsp cream cheese or sour cream as an alternative)
• Sandwich bread slices
❃ PROCESS ❃
1. Cook the Chicken:
Place the chicken breast in a pan with about 1 cup of water, season with pepper, bay leaf (optional), and a pinch of salt.
Simmer for 10–15 minutes, or until the chicken is fully cooked and most of the water has evaporated.
Remove the chicken, let it cool slightly, then shred it into fine pieces.
2. Prepare the Base:
Remove the bay leaf and peppercorns from the pan.
In the same pan, heat butter or oil. Sauté the onions until softened and translucent. If you want to use onion powder, skip this step and add it to the sauce later.
Add chili flakes and minced garlic (or garlic powder), cooking until fragrant.
3. Build the Sauce:
Sprinkle the flour evenly over the sautéed mixture. Cook for 1 minute to remove the raw taste.
Gradually whisk in the milk, ensuring no lumps form, and cook until the sauce thickens.
4. Season and Enrich
Add the paprika, black pepper, dried herbs and your choice of seasoning. Adjust salt to taste.
Stir in chopped spinach and cook for 1-2 minutes
Stir in the shredded cheese (or cream cheese/sour cream) until melted and smooth.
5. Combine:
Add the shredded chicken to the sauce, mixing well to coat evenly.
6. Assemble Sandwiches:
Spread the creamy chicken filling generously between slices of sandwich bread.
7. Toast and Serve:
Enjoy as is, or toast the sandwich for a crispy exterior.
