Seriously so good and easily customizable. And since it’s low calorie and high protein, it’s PERFECT for anyone on a weight loss journey!

INGREDIENTS

1.5 cup shredded chicken
1/2 diced onion
1 medium bell pepper
1 cup black beans
1 cup fire roasted diced tomatoes
1/3 cup Greek yogurt
1.5 cups enchilada sauce
Sprinkle of @osmosalt chipotle salt (code 2explorewellness)
1 oz shredded cheddar cheese
(Would also be great with corn, jalapeños)

DIRECTIONS

•Cook your chicken (for my batch prep method see linked video)
•Preheat oven to 350
•Chop your veggies and toss them in a large bowl with chicken.
•Drain and rinse your beans and add them.
•Drain your tomatoes, and add along with yogurt and sauce.
•Mix everything until well combined and place in oven safe dishes and top with cheese.
•Bake for about 20-30 minutes until everything is warm and cheese is melted.
•Add toppings of your choice and enjoy!
(Feel free to meal prep these ahead of time and add toppings the oven when ready to enjoy, or make a big batch as a casserole for a family dinner!
