It’s a quick and easy vegetarian meal that can be served with raita, curry, or any side dish of your choice. The dish combines basmati rice, green peas, and a blend of spices to create a light yet fragrant dish perfect for lunch or dinner.

Ingredients:

1 cup Basmati rice
1 cup green peas (fresh or frozen)
1 onion, finely sliced
1-2 green chilies, slit
1 tbsp ginger-garlic paste
1 bay leaf
1-inch cinnamon stick
2-3 cloves
2-3 green cardamom pods
1/2 tsp cumin seeds
1/2 tsp turmeric powder
1/2 tsp garam masala (optional)
2 tbsp oil or ghee
Salt, to taste
2 cups water
Fresh coriander leaves for garnish
Method:

Rinse the basmati rice well and soak it for about 20-30 minutes. Drain and set aside.
In a large pot, heat oil or ghee over medium heat. Add the bay leaf, cinnamon stick, cloves, cardamom, and cumin seeds. Let them splutter for a few seconds.
Add the sliced onion and sauté until golden brown.
Stir in the ginger-garlic paste and green chilies, cooking for another minute.
Add the turmeric powder and green peas. Cook for a few minutes.
Add the soaked and drained rice. Stir gently to combine the rice with the spices.
Pour in the water and add salt to taste. Bring it to a boil, then lower the heat, cover, and cook for about 10-15 minutes, or until the rice is cooked and the water is absorbed.
Garnish with fresh coriander leaves and serve hot.
