Ingredients:
• Paneer: 200g
• Cauliflower florets: 1/2 cup
• Bell peppers: 1 cup (sliced)
• Carrot: 1 large (sliced)
• Green beans: 9-10 (trimmed)
• Onion: 1 small (sliced)
• Sweet corn: 1/4 cup (boiled)
• Garlic cloves: 8-9 (minced)
• Olive oil: 1 tsp
• Oregano: 1/2 tsp
• Red chilli flakes: 1/2 tsp
• Salt: to taste
• Pepper: to taste
• Coriander leaves: for garnishing
• Water: for boiling vegetables

Instructions:
1. Boil the Vegetables:
• Bring a pot of water to a boil. Add the carrots and cauliflower florets, boiling them for 3-4 minutes.
• After 2 minutes, add the green beans and boil for an additional minute.
• Once the vegetables are tender, immediately transfer them to a bowl of ice-cold water to stop the cooking process. Drain and set aside.
• In a separate small pot, boil the sweet corn for 3-4 minutes until soft. Drain and set aside.

2. Season and Grill the Paneer:
• Cut the paneer into cubes or slices.
• In a bowl, season the paneer with salt, pepper, oregano, and red chilli flakes.
• Heat a grilling pan over medium heat and add 1/2 tsp olive oil.
• Grill the seasoned paneer on both sides for 3-4 minutes until golden and slightly crisp. Remove and set aside.

3. Sauté the Vegetables:
• Heat 1/2 tsp of olive oil in a pan over medium heat.
• Add the minced garlic and sauté for 30 seconds until fragrant.
• Toss in the onion slices and sauté until soft and translucent, about 2 minutes.
• Add the boiled veggies (carrots, cauliflower, green beans, and sweet corn) and the bell peppers to the pan.
• Stir-fry the veggies for 3-4 minutes until they are lightly golden and tender but still crisp.
• Season with salt, pepper, and a sprinkle of oregano and red chilli flakes.
4. Assemble and Garnish:
• Transfer the sautéed veggies to a serving dish.
• Place the grilled paneer on top of the veggies.
• Garnish with fresh coriander leaves.
