• Whole wheat flour (atta) – 3+1/4 cups (390 g)
• Warm oat milk – ½ cup (120 ml)
• Warm water – ½ cup (120 ml)
• Date syrup / jaggery syrup / maple syrup – 1 tbsp
• Ground flaxseed – 1 tbsp
• Hot water (for flax) – 3 tbsp
• Instant dry yeast – 2 tsp
• Salt – 1 tsp
• Olive oil or sunflower oil (optional) – 1 tbsp (softens crumb)

1️⃣ Prepare Flax Gel
Mix 1 tbsp flaxseed with 3 tbsp hot water. Let it sit for 5–10 mins until gel-like.

2️⃣ Make Dough
In a large bowl, combine:
• Atta, salt, and instant yeast
• Flax gel, syrup, and oil (if using)
• Warm oat milk + warm water mixture (add gradually)
Knead into a soft, slightly sticky dough for 8–10 minutes by hand (or 6 mins in stand mixer).

Cover and keep in a warm place for 1–1.5 hours until doubled in size.

4️⃣ Shape & Second Rise
• Punch down, shape into loaf
• Place in greased 20x10x7 cm tin
• Let it rise until 1–2 cm above the rim (30–45 minutes)

• Preheat oven to 180°C (350°F)
• Place a small tray of hot water in oven for steam (optional)
• Bake for 30–35 minutes until golden brown and hollow-sounding
