In this video I present Avocado And Egg Sandwich Recipe. I show how to make spread with hardboiled eggs, avocados, mayo, mustard and spices. This is a great idea for breakfast sandwich. It will help you start your day in a healthy way.
Ingredients needed:
1/2 avocado
2 hardboiled eggs
salt
black pepper
1 tbsp mayonnaise
1 tsp mustard
2 slices of bread
Preparation instructions:
Hard boil two eggs in advance. Cool them down. Peel them off and cut into small cubes and then place them in a bowl. Cut avocado in half. You will just need 1/2 avocado for two sandwiches. Cut avocado in small cubes also. You may use my technique of avocado cutting form the video. If you don’t feel too comfortable or you are afraid that you could cut yourself using my method then cut avocado into cubes in more traditional way on the cutting board. Scoop out avocado pulp cubes and place it in the same bowl. Add salt and freshly grinded black pepper and then add mayonnaise and mustard. Combine all ingredients well and your avocado spread is ready. This spread has creamy taste. If you desire more creamy texture you may put everything to the blender or food processor but who has time for this in the morning while preparing breakfast. And I’m not even talking now about cleaning this mass (oh blenders…). You can use this technique for creamy avocado spread when preparing this recipe as an appetizer on toasted bread. Now you can put two slices of bread on the plate. You may use your favorite type of the bread but I recommend whole grain dark rye bread. This bready really goes great with this sandwich. If you are more into white bread then you can find my recipe for that below. Spread equal amount of avocado egg mixture on each slice of the bread. This sandwich is very easy to make and needs only few ingredients. You will be amazed how tasty and healthy it is.
