320g white flour

30g barley flour

40g quick oats (instant rolled oats)

40g boiling water

1 large egg (weigh without shell)

6g instant yeast

130–140g cold water

6g sugar

7g salt

15g sweet milk powder

40g soft butter

🕒 Resting & Baking Time:

First rest: 40 minutes

Resting dough balls: 10 minutes

Final proof: until dough triples in size

Bake: 225°C for 25 minutes (optional: last 10 minutes under grill for golden crust)
