Not often, but occasionally I’ll come across a food trend that’s worth sharing, so for Day 2 of A Week of Salads That Don’t Suck, I give you the Viral Shaved Carrot Salad.
Will this be your main dish?
Probably not.
But if you have a pack of carrots laying around that are about to turn, this is an incredibly delicious way to make use of them. Not to mention they’re packed with antioxidants and Vitamins A & C, which helps with gut, heart and skin health, and will ultimately leave you happy and glowing.
So I guess we should probably call this one a beauty trend, too.

Here’s how to make this little pretty: Use a peeler to shave an entire pack of washed carrots into long ribbons. Place in a bowl. Add the juice of one lime, a tablespoon of rice vinegar, two tablespoons of soy sauce, and a tablespoon of sesame oil. Let sit for at least 15 minutes before adding a handful of thinly sliced green onions and some Everything But The Bagel seasoning. Enjoy!
