Ingredients (4 servings | 30 mins + soak)
For Vada:
• 1 cup urad dal (soaked 4–5 hrs, ground to thick paste)
• 1 tsp ginger (grated)
• 2 green chillies (chopped)
• 1 tsp cumin seeds
• Salt to taste
• Pinch hing
For Gravy:
• 2 medium onions (finely chopped)
• 3 medium tomatoes (pureed)
• 1 tbsp ginger-garlic paste
• 2 green chillies (slit)
• 1 tsp cumin seeds
• ½ tsp turmeric
• 1 tsp red chilli powder
• 1 tsp coriander powder
• ½ tsp garam masala
• Salt to taste
• 2–3 tbsp oil
• Fresh coriander for garnish
No-fry tip: Drop vada batter balls directly into boiling gravy!
