Oil-Free Ragda Chaat Recipe✨

Ingredients
For Ragda
• 1 cup dried white peas (soaked overnight)
• 1 potato
• ½ tsp turmeric
• 1 tsp salt
Spices
• 1 tsp coriander powder
• 1 tsp cumin powder
• 1 tsp red chilli powder
• 1 tsp chaat masala
• 1 tsp black salt
• Salt to taste
Vegetables
• 1 onion (long sliced)
• 1 tomato (chopped) 1 Carrot ( julienne)

Tamarind Water
• Tamarind soaked in water for 1 hour, pulp extracted
Green Chutney
• 1 inch ginger
• 2 green chillies
• Handful mint leaves
• Handful coriander leaves
• Pinch of salt
For Topping (Optional)
• Sliced onion
• Chopped tomato
• Julienne carrot
• Sev (optional)
• Homemade baked papdi (optional)
Green-Tamarind Water (Final Drizzle)
• Green chutney + tamarind water + little jaggery (mixed)

Method
1. Cook the Ragda
1. Soak white peas overnight.
2. Pressure cook soaked peas with potato, turmeric, and salt for 3 whistles.
3. Mash slightly once cooked.
2. Prepare the Ragda Base
4. Add coriander powder, cumin powder, red chilli powder, salt, black salt, and chaat masala.
5. Add sliced onion and chopped tomato.
6. Cook on low heat.
3. Add Tangy Flavour
7. Add prepared tamarind water and mix well.
4. Make Green Chutney
8. Blend ginger, green chillies, mint, coriander, and salt into a smooth chutney.
9. Add this chutney to the ragda and cook for 4-5 minutes until slightly thick.
5. Assemble
10. Transfer ragda to a serving bowl.
11. Top with onion, tomato, carrot, sev, and papdi if using.
12. Drizzle green-tamarind water on top and serve.
